Hacienda Victoria is a single-estate farm located in Cerecita, near the coast of Ecuador. Apart from leading the path preserving Arriba Nacional, the local team has focused in developing a new variety from a blend of trinitarios and criollos called: Perla!
THE FARM
The Perla trees that are in Hacienda Victoria have the potential to produce exquisite beans only sold to selected clients world-wide.

The farm strives to make a positive social impact by providing a stable income to more than one hundred families while developing a sustainable environment for their workers, their land and the local fauna.

Hacienda Victoria is the first carbon neutral certified cacao farm!
POST HARVEST
The beans are classified according to the harvest time and the general conditions of wet mass to ensure a successful fermentation process. The wet beans ferment in wooden boxes and for a duration of 5 to 6 days with a specific protocol that guarantees a unique Perla flavour.

For drying, the cement of the farm has been well conditioned and takes place also following a protocol with slow and constant movements.

It starts with a few hours of sun exposure on the first day, increasing the time in the following days until it reaches the right moisture.
